- 3 quarts, 1/2 cup corn, cut, IQF, 30#
- 3 quarts, 1/2 cup black beans, low sodium
- 1 quart, 2 1/4 cups diced local tomato of choice
- 3 cups, 2 tablespoons Italian dressing
- Chop local tomatoes.
- Drain beans.
- Combine all ingredients and gently mix through.
- Portion into 1/2 cup souffle cups for serving.
